This is a simple and easy-to-prepare smoothie recipe (Atkins Diet friendly). Combine all ingredients and process in a blender for a delicious frozen drink made from silken tofu, coconut milk and raspberries. You can substitute any type of frozen berries for raspberries.
Tofu (a.k.a. bean curd) has relatively low calorie and low fat count. It is a good source of protein, high in calcium, magnesium and iron (depend on coagulants used). There are only about 62 calories in 4 oz. (113 g) of soft silken tofu used in this recipe.

Yields: 1 serving (Each serving: 8.7 g Net Carbs)
Ingredients:
4 oz (113 g) silken tofu
1/2 cup unsweetened coconut milk
1/3 cup ice cubes
1/2 cup frozen raspberries
1 sachet sweetener
Directions:
- Combine all ingredients in a blender and process until very smooth.
- Pour into a glass and garnish with some extra berries.
- Serve immediately.
